Lightened Up Spinach & Swiss Quiche




I tried something new last night. I made my first quiche! Tackling new recipes completely from scratch can definitely be intimidating, but when I put my mind to something I have to follow through. Even if it turns out bad. And it has. Cooking is all about experimenting. You have to be willing to take risks to get good results. I'm happy to report that this experiment was a success. It tastes a bit lighter than your typical quiche, but that's because it is. It still has a whole lot of flavor and will leave you feeling satisfied. Pair it with a small side salad and you have one delicious and nutritious meal. 




Lightened Up Spinach & Swiss Quiche
(makes 1 quiche - Inspiration found here)

Ingredients:
For the crust:
- 1/2 cup all-purpose flour
- 3/4 cup old fashioned oats
- 1/4 tsp salt
- 3 tbsp butter, cold and cut into small cubes
- 3 tbsp skim milk
- Cooking spray

For the filling:
- 3 medium eggs
- 3 medium egg whites
- 1 1/2 cup chopped spinach
- 1 1/2 cup shredded low-fat Swiss cheese
- 1 (6 oz) container of fat-free Greek yogurt
- 1/2 cup skim milk
- 1/2 tsp nutmeg

Method:
For the crust:
1. Preheat the oven to 400 degrees. 
2. Place the flour, oats, and salt in a large food processor with a dough blade and pulse until the ingredients are mixed.
3. Add the butter and continue to pulse until it begins to thicken up a bit (it reminded me of broken up rice krispie treats).
4. Then add the milk and pulse to combine.
5. Remove the mixture from the processor and form into a ball.
6. Spray the bottom of a 10.5 inch quiche dish with cooking spray. 
7. Place the dough into the quiche dish and using your hands spread the dough out around the bottom and sides of the dish. 
8. Bake at 400 degrees for 7 minutes. Remove from the oven and set to the side.

For the filling:
1. Turn the oven down from 400 degrees (for the crust) to 375 degrees.
2. Place the spinach on top of the crust, and layer the Swiss cheese over top. 
3. Whisk the eggs, egg whites, Greek yogurt, milk, and nutmeg together and pour the mixture over top of the spinach and cheese. 
4. Bake the quiche for 25 to 30 minutes at 375 degrees (or until the top of the quiche begins to turn a light golden brown). 
5. Once the quiche is done baking, let it cool for about 5 minutes before serving.
