Re-purposing

As I mentioned last week, I was part of a salad feature for The Everygirl. After the shoot, I could not stop thinking about the Crab Cobb I came up with. Everything about it was SO tasty. And, since we have been trying to incorporate more light, healthy meals into our diets at my house, I thought adding a salad to this week's menu would be perfect. Well, friends...the salad was just as good if not better than the first time I made it. I made a few minor changes and served it up on my chip bowl from C&B. I loved that I was able to put this pretty bowl to use with something that it's not typically used for. 


For those of you that missed it the first time around, here's the recipe with my few (literally two) changes. 

Crab Cobb Salad with Lemon Basil Vinaigrette
(serves 2)

Salad Ingredients:
- 1/2 bag of romaine lettuce
- 1 (6 oz) can of crab meat, strained
- 3 pieces of turkey bacon, cooked and roughly chopped
- 2 hardboiled eggs, sliced (*new addition)
- ½ avocado, diced
- ½ cup of light shredded mozzarella
- ½ cup of grapes tomatoes, halved
- ½ cup of chopped scallions

Dressing Ingredients:
(Blend all of the following together)
- 1/3 cup of olive oil
- 1 tbsp dried basil (*instead of fresh)
- Juice of 1 lemon
- 1 clove of garlic
- Dash of salt

This salad not only makes for a beautiful presentation, but it's absolutely delightful. Perfect for Spring & Summer.

yum yum! I love hearty salads and the hubs is becoming to like them more and more = success!! He just made an awesome grilled shrimp one and it was sooo good! yay! Will try this :)
