Goat Cheese + Salami + Olive Tapenade Sandwich: The recipe is obviously pretty easy. I take a whole wheat sandwich thin, a few slices of salami, a tbsp or two of some olive tapenade (I chose Trader Joe's black olive tapenade spread.), and a small handful of goat cheese crumbles. Before I'm ready to eat it, I place the two halves together with all of the ingredients and place the sandwich in a toaster oven to heat it up a bit.
This combination is to die for. I promise you. Not a salami fan? Sub out another deli meat of your choice. Don't eat meat at all? I could see some sliced tomatoes pairing nicely with these ingredients. Of course for me, you put goat cheese on anything and i'm one happy girl.
To me, this sandwich is gourmet eating on a budget. All of my ingredients ring in at under $12 for the week. Here's the breakout:
1 package of whole wheat sandwich thins - $2.99
1 container of goat cheese crumbles - $2.29
1 jar of olive tapenade spread - $2.29 (I think?)
1 package of salami - $2.99
The grand total of this sandwich for the week comes in at a little under $11 before tax. (After tax I would guess it would be around $12.) Quite the steal, don't you think? Buying lunch during the week can cost about that for just one meal (at least in this city it does). This will definitely get you at least five meals, and it just tastes SO good!
